Life is rough; I've seen it first hand.  But life is also amazing; I've seen that too! But no matter where we are in life lets choose to be happy and lets choose to be grateful! Abraham Lincoln said, "most folks are as happy as they make-up their minds to be.
It's not always easy to look on the sunny side. But no matter what our circumstances are, we all have a reason to be grateful! Whether it's a lesson learned on a bad day, or the ice cream we get to enjoy with a loved one. We should express our gratitude each and every day to those around us, and to our Heavenly father above. 
I'm grateful for my savior Jesus Christ and for his great example! 
I'm grateful for my family! They are everything! My sweet littles who are so loving and teach me everyday! I am grateful for my husbands sense of humor and light heart. Also, that he has a great job and works hard to support us! Growing up, I just knew that I would be a working mother. I'm grateful for my education and that I'm prepared to work. But I know how lucky I am to be able to stay home with my babies! 
I'm grateful for the sunshine, because I'm always cold! 
I'm grateful for all the family and friends that put up with me and support me.

Thanksgiving Printable Place Mats

These are 11x17. To download, click on the picture and click download. (Which is the same as 2 pieces of paper side by side. There is no need to use card stock. Just regular grade printing paper is fine. Your local print center should have this paper and will be able to print these up for you!)

Candied Yam Soufflé

Need a tasty side dish for your Thanksgiving Feast? Here's my fave... Candied Yam Soufflé. I'm telling you it's a must for the turkey day line-up. Not to mention it's a cinch!
It's usually made with canned yams...but I thought it would be fun to try it with fresh yams. And it turned out delish! Nothing like fresh produce right?!! And I love how the marshmallow turns into a flaky sweet layer on top! 

1 stick butter
1 1/2 cup light brown sugar
1/3 cup chopped pecans
2 large yams or 3 medium sized. 
2 teaspoon ground cinnamon
1 teaspoon ground nutmeg
1 (12-ounce) jar marshmallow topping

Set a large pot of water to boil. Peel yams and chop up into equal pieces. Throw in the pot and cook for about 25 minutes or until tender. Drain them and mash with a potato masher, leaving some chunks.  Set aside.

Preheat oven to 325 degrees F.
Melt butter in a saucepan over medium heat. Add brown sugar and pecans. Simmer for about 3 minutes. Pour sugar/pecan mixture over yams. Stir until combined thoroughly. Add in cinnamon and nutmeg. Transfer to a pie pan. Top with marshmallow topping. (This part is tricky! Try not to get the yams all over the marshmallow.) 

Bake for 15 minutes at 325 degrees F. Remove from the oven and raise the oven temperature to 400 degrees F. Bake for an another 10 minutes at 400 degrees to brown the top. (Be sure to keep an eye on it so it doesn't over brown.)

Pretty: Dress-Up Wardrobe

My SIL, Lisa Draper, made Sophie the most awesome dress-up wardrobe for her birthday. It was the perfect gift in every way possible! It has a mirror on one side, knobs to hang necklaces, a storage box at the bottom, and gold polka dots. She thought of everything!
I want to do a quick shout out to Lisa and say.... "Liiiiisssaaaaaa.... you are aaaaamazing!" 
Lisa uses her talents to bless the lives of those around her! 
She is mathematically skilled and uses this talent often to do carpentry and other DIY projects. Lisa has a mind very different from mine and I am grateful she shares her talents with my family and with others! 
I had so much fun making up the gold letters to place above! 
Cardboard letters and gold spray paint = Pretty!
We were finally able to get all of the play clothes and accessories organized. This wardrobe puts the fun in functional. Ha ha... cheesy...but true! And most importantly, Sophie loves it!

Holiday Family Album

I had this idea years ago to do a Holiday Family Album. We set it out on our coffee table for anyone to flip through when they are over. It's become one of our favorite traditions! 
We have an album for...
Halloween; to show off our costumes each year. 
Christmas; to display our family Christmas cards. 
Kid's Birthdays; filled with baby pictures and I plan on adding a birthday or school picture every year.
Wedding Album; to set out on our anniversary. I think it would be fun to add pictures of PJ & I each year to show how we grow old together. 

 I thought I'd share our Halloween Album so far...
2007: Sailors
We were still dating. 
2008: Magician & The Rabbit he pulled out of his hat.
1st year married
2009: Mario & Princess Peach 
2 Months Pregnant with Sophie
2010: We threw these together last minute... Farmer, Witch, Mouse 
Sophie's 1st Halloween

2011: Circus - PJ was the ring leader, I was the acrobat, and Sophie was the cutest elephant! 
Elephants were her favorite!

2013: Batman, Catwoman, Mickey  & Minnie
Brandon's 1st Halloween
20014: Maverick from Top Gun, Barbie, Pinnochio & the Blue Fairy

 My kids love flipping through the albums the most! 
But I love the birthday albums the best and flipping through the albums to remember how tiny my babies once were.
