Ricotta Cheese Cookies: The Best Cookie Ever!!!!!!

"Do you wanna build a snowman?" This song is always stuck in my head! 
Courtesy of my little baby boy who is obsessed with snowmen right now... and I think it's the cutest thing! 
These Ricotta Cheese Cookies are hands down the yummiest cookies you will ever have! We find any excuse to make them year round! We usually just frost them and throw a few sprinkles on; but it was fun to get a little festive and turn them into snowmen!  
Cookie Ingredients:
2 cubes butter
2 cups sugar
4 cups flour
3 eggs
1 tsp vanilla
1 lb. ricotta cheese
1 tsp. salt
1 tsp. baking soda

Vanilla Glaze Ingredients:
2 cups powdered sugar
1 tsp vanilla
2 tablespoons butter melted
3-4 tablespoons of milk

Cookie Directions: 
1. Cream butter and sugar well, add eggs; beat, add vanilla; beat, add cheese; beat.
2. Mix together salt, baking soda & flour. Add to mixture and blend well. 
3. Spray cookie sheet. Drop by big spoonfuls onto a cookie sheet. 
*Try to make them all about the same size. 
4. Bake at 350 degrees for 10-15 minutes. 
Pat them with the palm of your hand, if they feel firm they are done!
5. Place all of the cookies on a cooling rack. 
6. Frost with Vanilla Glaze while still warm.

Vanilla Glaze Directions: 
1. Cream together and then frost ricotta cookies. 
2. Place the rack of cookies on top of foil or parchment paper while you glaze. Since you are frosting hot cookies, glaze will melt and drip down onto the foil. (This way you will have easy clean-up!)
3. If using any sprinkles, be sure to add them quickly before the glaze cools off. 

*You can make these small and have a bigger batch, or bigger and have a smaller batch. Just remember that the bigger you make them the more time they will need to cook... and visa versa!
*Also, store these in a sealed container. They will be even more moist the next day. 

Now go make these! And be prepared.... they will knock your socks off!
