Good Things Utah: Hooray Littles

Good Things Utah did a segment on Hooray Littles and the car seat swaddle. It was so exciting and really fun!

White Chicken Chili - My favorite dinner on a cold night!

This meal is probably my favorite food ever... especially since it's been so cold.  
I thought I'd share the recipe with you because it's easy, nutritious, and straight up yum town! 

Ingredients
  • 2-3 large chicken breasts, cooked and shredded 
  • 2 15 oz. cans white beans with juice
  • 1 15 oz. cans of white kidney beans with juice
  • 2 4 oz. cans diced green chilies
  • 2 14 oz. cans chicken broth
  • 1 15 oz. cans white corn with juice
  • 1 clove garlic, minced
  • 1 tsp. lemon pepper (or more to taste)
  • 1 Tbs. ground cumin
  • 1 onion diced
  • 4 fresh limes
  • corn tortilla chips
  • sour cream
  • grated cheddar and monterrey jack cheese
  • 1 bunch of cilantro chopped
  • 1tbsp. of butter or olive oil
  • 2-3 avocados
Directions
1 - Saute onion and garlic with butter or olive oil. Season with salt and pepper. 
2 - Add cooked chicken (Boil chicken and shred it), beans, green chilies, broth, corn, garlic, onion and seasonings to a pot. Stir well.
3 - squeeze the juice of 1 lime into soup. Stir well.
4 - Warm on stove, letting it simmer for 30 min. to an hour. Stir it occasionally.

Serve with cheese, lime slices, sour cream, cilantro, avocado and crushed tortilla chips on top.
Have you tried this new squeezable sour cream by Daisy. It's awesome! So much easier to squeeze out a dollop! I'm definitely a fan! 


Just a couple more things…

1- I usually double it for a crowd larger than my family, or I double it and freeze the other half, {if it’s fresh chicken, } for an easy meal later on. 
2- Costco sells rotisserie shredded chicken that is perfect and helps you skip a step. I will buy it specifically for this and also keep some on hand in my freezer so that I can just thaw it and throw it into my soup. 
 Here is a picture of the chili with and without toppings to give you an idea. Everyone ends up topping their bowl of chili a tad differently. I personally pile it all on!

Maternity & Family Pics: Maternity Clothes Faves

We had so much fun taking family pictures this year, along with a few shots of the baby bump. It was a big change of scenery for us with the beautiful golden fall leaves all around. Both my kids were really into smiling this year and besides wanting to run through all of the leaves on the ground, they were really cooperative. I mean, how often does that happen?!
I fell in love with this maxi dress from Asos and just had to have it. It's not maternity! So you better believe I will be wearing it long after baby is born. The empire waist allows the fabric to just drape over the belly. 
We are so excited for our baby boy to join the family. Just 2 weeks to go! If any of you out there have any name suggestions we'll take them. We have yet to come up with a name that both PJ & I can agree on.

Here are some of my favorite clothing items both, maternity and non-maternity, and at different price levels. I would say that Asos is my favorite place to get maternity clothes! They are generally affordable, and super stylish. Nordstrom, gap and old navy also have great options!

New Year's Resolution: Birthday Calendar {Free Download!}

It's the new year and I'm so excited for what 2016 has in store! A new baby, working on the new Hooray Littles shop, looking to possibly purchase a house... all things exciting! 

Last year my resolution was to read more. I set a goal to read at least 1 book a month. I ended up reading 25 books total! I'm impressed with myself and I hope I can keep it up! The book I liked the most was Atonement by Ian McEwan. So good!

I have something new in mind this year for my New Year's Resolution. This year on my birthday, a dear friend who I haven't spoken with in a while, whom I know very well how busy they are with work, family life, volunteer work etc., called me on my birthday and left a really sweet message. They took 10 seconds out of their life to reach out to me on my special day. They could have texted or sent me a message on facebook, but they chose to show me I'm worth more than that to them. Such a simple thing, but it meant a lot! To take the time to reach out to those who have made a difference in your life; It's something I can do better!

So this year my goal is do better with Birthdays. The dates seem to just pass me by and I end up not realizing it's someone's bday or simply forgetting to call amidst the busy schedule. I made a birthday calendar to put up on the wall to help me stay on top of my friends and family I wish to celebrate!
